Number Of Ingredients 5

3 tablespoons extra-virgin olive oil
3 fennel bulbs, trimmed and cut into 1-inch wedges
4 garlic cloves, slightly crushed
Coarse salt and freshly ground pepper
1/4 cup plus 2 tablespoons finely grated Parmesan cheese

Steps:

  • Preheat oven to 400 degrees. Heat oil in a large heavy ovenproof skillet (preferably cast-iron) over medium-high heat until shimmering; add fennel, pressing down so that most of it fits snugly in a single layer. Add garlic to skillet. Brown fennel on 1 side for 4 minutes. Flip, and sprinkle lightly with salt. Cover skillet with parchment-lined foil, and transfer to oven. Roast until fennel is very tender, 20 to 30 minutes. Let cool slightly. Raise oven temperature to 450 degrees. Puree fennel and garlic in a food processor until smooth. Season with salt and pepper, and stir in 1/4 cup cheese. Transfer mixture to a 3-cup baking dish, and sprinkle with remaining 2 tablespoons cheese. Bake until dip is hot in center and cheese is golden brown, about 20 minutes. Serve immediately.

I'm allergic to fennel, so I substituted it with celery. The dip was still delicious!

I followed the recipe exactly and the dip turned out curdled. I'm not sure what went wrong.

This dip is a bit bland. I would recommend adding some more spices or herbs to give it more flavor.

I found that the dip was a bit too thick for my liking. I added a little bit of milk to thin it out and it was perfect.

I'm not a big fan of fennel, but I really enjoyed this dip. The Parmesan cheese helps to mellow out the fennel flavor.

This dip is a great way to use up leftover fennel. I had some leftover from making a salad and this was the perfect way to use it up.

I used a blend of Parmesan and Asiago cheeses and it turned out great! This dip is so versatile.

I added a bit of red pepper flakes to give the dip a little kick. It was a great addition!

I'm not usually a fan of fennel, but this dip has changed my mind. The fennel and Parmesan complement each other perfectly, creating a complex and satisfying flavor.

This dip is a delightful symphony of flavors, striking a perfect balance between the warm, earthy sweetness of fennel and the sharp, nutty Parmesan. It's a creamy and luscious treat that disappears all too quickly!
