Walnut-Oil Dressing image

Yield One-and-one-quarter cups of dressing

Number Of Ingredients 11

1 egg yolk
1 teaspoon Dijon-style mustard
1 tablespoon white-wine vinegar, preferably champagne vinegar, plus more as needed
Juice of one lemon, or to taste
1 teaspoon finely minced garlic
1 tablespoon finely chopped shallots
1/2 teaspoon sugar
1/2 cup walnut oil
1/2 cup peanut oil
Salt to taste, if desired
Freshly ground pepper, preferably white, to taste

Steps:

  • Beat together the egg yolk, mustard, vinegar, lemon juice, garlic, shallots and sugar.
  • Beating rapidly with a wire whisk, slowly add the walnut and peanut oils. Add salt and pepper to taste.
