Walnut and Oat-Crusted Salmon image

2 salmon fillets (6 ounces each), skin removed
1/4 teaspoon salt
1/4 teaspoon pepper
3 tablespoons quick-cooking oats, crushed
3 tablespoons finely chopped walnuts
2 tablespoons olive oil

Steps:

  • Preheat oven to 400°. Place salmon on a baking sheet; sprinkle with salt and pepper. Combine remaining ingredients; press onto salmon. Bake until fish just begins to flake easily with a fork, 12-15 minutes.
