Walnut and Grape Chicken Salad Supreme image

My son and roommates love this recipe, especially on a croissant.

Number Of Ingredients 10

2 1/2 c grilled chicken breasts, cut into bite sized chunks
1/3-1/2 c mayonnaise
1/4 c dijon mustard
1 1/2 ribs of heart of celery stalk, diced
1 c seedless red grapes, halved
1/2 c walnut halves, rough chopped
2 1/2 tsp dried thyme
salt and pepper to taste
6-8 lettuce leaves
3-4 slices of avocado per sandwich

Steps:

  • 1. Once the chicken has been grilled and chopped. In a medium mixing bowl, add all ingredients and mix well, making sure that all the chicken is coated. Let set in refrigerator until well chilled. Serve on croissant with lettuce and avocado.

This recipe is a great starting point, but I like to customize it to my own taste. I usually add more walnuts and grapes, and I also like to use a mix of mayonnaise and Greek yogurt for the dressing.
