Vegetarian Taco Burgers image

These taco burgers will delight anyone at your table, whether they're vegetarian or not. Serve them in hamburger buns with whatever dressings/toppings you desire!

1 (14.5 ounce) can kidney beans, rinsed and drained
4 tablespoons taco seasoning mix
1 pinch freshly ground black pepper
1 (12 ounce) package firm tofu, drained
1 cup crushed cheese-flavored tortilla chips
4 tablespoons all-purpose flour
2 tablespoons canola oil, or as needed

Steps:

  • Combine beans, taco seasoning mix, and pepper in a large bowl with an electric mixer. Add tofu and mash into the bean paste until mostly smooth but with some chunks remaining. Mix in 1/2 of the crushed chips and flour. Divide mixture into 4 patties and press together firmly so they hold their shape. Turn them over in the remaining crushed chips to coat.
  • Heat oil in a large skillet over medium-high heat. Add burgers and fry until crispy, 2 to 3 minutes per side.
