3 cups peeled, cubed sweet potatoes
1 can (14-oz) tomatoes, drained and cut up
1 can (15 oz) chickpeas, drained and rinsed
1 Tbsp lemon juice

1 tsp ground cumin
1 tsp curry powder
1 tsp ground coriander
1 tsp chili powder

This stew was a bit too oily for my taste. I would recommend using less olive oil.

The vegetables in this stew were a bit overcooked for my taste. I would recommend cooking them for a shorter amount of time.

I found this stew to be a bit bland. I added some extra spices and it was much better.

This stew is a bit spicy for my taste, but I still enjoyed it. I would recommend using less cayenne pepper if you're not a fan of spicy food.
