I love this dish! And that's saying a lot since there is no meat in it :) Makes a hearty meal. Original recipe found in "Land O Lakes Occasionally Vegetarian Recipe Collection". Even though it's from Land O Lakes, don't look for butter in this recipe - it's not there

I would make this recipe again, but I would make a few changes. I would add more vegetables and I would use a different type of rice.

I thought this recipe was just okay. It wasn't bad, but it wasn't anything special either.

I followed the recipe exactly and the rice came out undercooked. I had to cook it for an extra 10 minutes.

This recipe was a bit too bland for my taste. I think it could have used more seasoning.

The saffron really made this dish special. It gave the paella a beautiful golden color and a slightly floral flavor.

I'm not a vegetarian, but this vegetable paella was so good, I didn't miss the meat at all. The vegetables were perfectly cooked and the rice was fluffy and flavorful.

I tried this recipe last night and it was a hit! My family loved the smoky flavor from the paprika and the tender vegetables.
