Vegetable Confetti image

A quick, colorful salad that can be made a day in advance.

2 medium carrots, shredded (1 1/2 cups)
1 medium bell pepper, chopped (1 cup)
1 small zucchini, shredded (1 cup)
1/4 cup fat-free Italian dressing
1/4 teaspoon pepper

Steps:

  • Mix all ingredients in glass or plastic bowl. Refrigerate any remaining salad no longer than 48 hours.
