This salad is a great way to use up leftover vegetables. I had some leftover roasted broccoli and cauliflower, and they worked perfectly in this salad.

The dressing is a little too tangy for my taste. I would recommend using less vinegar or adding a bit of honey to balance out the flavors.

This barley salad is a delightful mix of flavors and textures. The vegetables are fresh and crisp, the barley is chewy and nutty, and the dressing is light and tangy. I especially love the addition of feta cheese, which adds a salty and creamy touch.
