Vegan Tofu Salad image

Delicious, as-good-as-chicken salad, but with tofu instead! Perfect on a hot summer day. Serve cold as a sandwich, or just eat it plain!

2 (12 ounce) packages tofu, drained and cubed
1 cup vegan mayonnaise (such as Follow Your Heart® Veganaise®)
2 ½ tablespoons cider vinegar
1 tablespoon brown rice syrup
2 teaspoons poppy seeds
4 stalks celery, chopped
1 ½ cups grapes, halved
¾ cup chopped green onions

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Spread tofu evenly on a baking sheet.
  • Bake in the preheated oven until golden, 10 to 15 minutes.
  • Mix vegan mayonnaise, vinegar, brown rice syrup, and poppy seeds together in a large bowl. Add celery, grapes, green onions, and baked tofu. Mix together and chill in the refrigerator until ready to serve.
