3 cups shredded carrots
2 cups broccoli slaw or finely julienned broccoli stalks
2 cups mung bean shoots
1 large cucumber peeled, seeded and julienned
2 cups (2 bunches) fresh cilantro / coriander chopped finely
1 bunch of green onions sliced finely

This salad is a bit too bland for my taste. I think it could have used some more seasoning. The dressing was also a bit too oily for my liking.

This salad is a great way to use up leftover vegetables. I had some leftover carrots, broccoli, and bean sprouts, and this salad was the perfect way to use them up. It was delicious and healthy, and it was really easy to make.

This salad is so refreshing and delicious! I love the crunch of the carrots and broccoli, and the bean sprouts add a nice touch of texture. The dressing is also really good - it's light and flavorful, but not too heavy.
