Vanessa's Low Glycemic Load Strawberry Shortcake image

This is a creation as we are trying to embrace a low glycemic index / low glycemic load in our house! We love this one!

Number Of Ingredients 13

1/2 cup oat flour
1/4 cup flax seed (ground)
1/4 cup wheat germ (ground)
1/2 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon honey
1/4 cup butter
1/2 cup milk
1/2 quart ripe strawberry, washed, hulled and sliced
1/4 teaspoon vanilla extract
1/2 cup heavy whipping cream
1/8 teaspoon vanilla
1/8 cup sour cream

Steps:

  • Mix dry ingrediants with butter to form soft crumbs, stir in milk.
  • drop onto cookie sheet and bake for 15-20 minutes at 450 degrees.
  • Chill cream and whip until soft peaks are formed, stir in sour cream and vanilla flavoring.
  • Carefully cut shortbread in half once cooled, layer whipped cream and strawberries inside.
