Unattended Rib Roast image

1 standing rib roast, any size
salt and pepper

Steps:

  • 1. Preheat oven to 375 degrees 6 to 7 hours before mealtime. Season roast with salt and pepper and place in roasting pan.
  • 2. Cook, uncovered for 1 hour, then turn off oven. DO NOT OPEN OVEN DOOR. Turn heat on again to 375 degrees 40 minutes before serving. The roast will be medium rare in the center and well done around the edges.
