If you love stuffed peppers then you'll love this deconstructed version of them. It is super easy to make and packs a lot of flavor the whole family will enjoy. We used panko bread crumbs for the topping and it added a nice crunchy texture to this lovely dish.

Time 38m

Number Of Ingredients 12

2 c prepared rice
1 lb ground beef, lean
2 green bell peppers; sliced
1 small sweet onion; sliced
2 clove garlic; minced
1/2 tsp salt
1/4 tsp pepper, black
1 tsp Italian seasoning
2 1/4 c marinara
1 c shredded mozzarella cheese
1/2 c breadcrumbs
1 Tbsp olive oil

Steps:

  • 1. Preheat oven to 350.
  • 2. Place ground beef in a large, oven-safe skillet, over medium-high heat. Cook until browned. Drain excess grease if needed (if beef is lean you can probably skip that step).
  • 3. Add onion, peppers and garlic to ground beef and cook until onion is just beginning to soften. Season with salt, pepper, and Italian seasoning.
  • 4. Stir in rice, marinara and half the cheese. Remove from heat. Sprinkle remaining cheese over the top.
  • 5. In a small bowl, toss the breadcrumbs with the olive oil and then sprinkle the mixture over the top of the beef mixture.
  • 6. Bake in oven for 10 minutes.
  • 7. If desired, place under broiler for 2-3 minutes to get cheese all ooey gooey and browned. Enjoy! For more specifics visit http://foodyschmoodyblog.com/un-stuffed-peppers/

These peppers were delicious! I used a variety of colors of bell peppers, and they all cooked evenly. The filling was flavorful and cheesy, and the peppers were perfectly tender.

I'm not a big fan of bell peppers, but I really enjoyed these unstuffed peppers. The filling was flavorful and the peppers were cooked perfectly.

I followed the recipe exactly, but my peppers were undercooked. I had to put them back in the oven for an additional 10 minutes.

These peppers were a bit bland for my taste. I think I would have liked them better with a more flavorful filling.
