Steps:
- 1. Bake potatoes 45 to 60 minutes at 400 degrees, or until tender. Cut into halves lengthwise. Scoop potatoes out of the shell into a bowl and mash. SAVE SHELLS and set them aside. Add the salt, pepper, butter and sour cream. Beat until light and fluffy. Spoon back into shells. Place on baking sheet and top them with the shredded cheese, chives and bacon. Bake UNCOVERED 20-25 minutes or until HOT.
