Turkey Salad Sandwiches image

Prepare this sandwich filling in 20 minutes with leftover turkey. Apple, celery and green onions add crunchy texture.

1 1/2 cups diced cooked turkey
1/2 cup diced unpeeled apple
1/2 cup mayonnaise or salad dressing
1 1/2 teaspoons curry powder
1/4 teaspoon ground ginger
1/4 teaspoon pepper
1 medium stalk celery, chopped (1/2 cup)
2 green onions, chopped (2 tablespoons)
8 slices whole grain bread

Steps:

  • In medium bowl, mix all ingredients except bread.
  • Spread turkey mixture on 4 slices bread. Top with remaining bread.
