Turkey Croquettes image

This is a very tasty way to use up leftover turkey. Makes a great sandwich too!

Number Of Ingredients 9

4 c turkey, shredded and chopped
1 1/2 c cracker crumbs, crushed
1/4 c onion, chopped
1/4 c celery, chopped
1/4 c mayo
2-3 eggs
salt and pepper to taste
olive oil
hamburger buns, opt

Steps:

  • 1. Shred or chop turkey. Add cracker crumbs, (start with 1 c. add more if needed), chopped onion and celery, black pepper & salt if desired. Mix together, add mayo and eggs. (Start with 2 eggs, if it's too dry add the third one). Mix well to combine all ingredients.
  • 2. Form into oval patties and fry in a little olive oil till nice and brown. Serve as a main dish or on a sandwich!

These are the best turkey croquettes I've ever had! The coating is crispy and flavorful, and the turkey is moist and tender. I love that they're made with leftover turkey, so they're a great way to use up leftovers after Thanksgiving or Christmas.
