This is a very tasty way to use up leftover turkey. Makes a great sandwich too!

Steps:
- 1. Shred or chop turkey. Add cracker crumbs, (start with 1 c. add more if needed), chopped onion and celery, black pepper & salt if desired. Mix together, add mayo and eggs. (Start with 2 eggs, if it's too dry add the third one). Mix well to combine all ingredients.
- 2. Form into oval patties and fry in a little olive oil till nice and brown. Serve as a main dish or on a sandwich!
