Turkey-Chutney Salad image

Number Of Ingredients 13

2 cups mayonnaise commercial or Basic
1/2 cup mango chutney or other fruit chutney
2 teaspoons curry powder
1 teaspoon salt
4 cups turkeys diced cooked
1 cup celery diced
1/2 cup coconut flaked
1/2 cup raisins golden
1 (8-ounce) can pineapple chunk well drained
2 apples unpeeled Red Delicious, cored and chopped
2 bananas sliced
lettuce leaves
1/2 cup cashew nuts coarsely chopped or peanuts

Steps:

  • Combine mayonnaise, chutney, curry powder and salt blend well. In a large bowl, combine turkey, celery, coconut, raisins and pineapple chunks. Blend in dressing. Refrigerate at least 3 hours. Just before serving, stir in apples and bananas. Serve on lettuce, sprinkle with cashews or peanuts.
