Tuna and Potato Salad a La Espanola image

A healthy salad that goes heavy on the vegetables with a vinegar and oil dressing. The recipe calls for sherry vinegar, but other vinegars, such as white wine, red wine, cider, etc. would work well.

This recipe was easy to follow and the salad turned out great! I used canned tuna, but I think it would be even better with fresh tuna.

This salad is a delicious combination of flavors and textures. The tuna is flaky and flavorful, the potatoes are creamy and tender, and the dressing is tangy and refreshing. I especially enjoyed the addition of the hard-boiled eggs and olives, which
