TROPICAL MASHED SWEET POTATOES
I was looking for a new and interesting way to use cook my sweet potatoes, and this was exactly what the doctor ordered. This is a tasty and sweet dish that is very easy to prepare :)

Steps:
- 1. In a large sauce pan, cover sweet potatoes with water; bring to a boil. reduce heat; cover and simmer for 30 min. (or until tender). Drain and cool.
- 2. Pre-heat oven to 375 degrees. Peel the potatoes and place in a mixing bowl; mash. Add the pineapple, 2 tablespoons Butter, salt and pepper; mix well.
- 3. Transfer to a greased 2-qt. baking dish.
- 4. Combine saltines, brown sugar, cloves and remaining butter,; sprinkle over potatoes. Bake uncovered, at 375 degrees for 30 min.
