Tropical Island Chex Mix image

Coconut, banana chips, fruit flavors and macadamia nuts add a tropical treat to this island mix.

4 cups Rice Chex™ cereal (gluten free)
1/2 cup shredded coconut, if desired
1/2 cup dried banana chips
2/3 cup dried tropical three-fruit mix (from 7-oz package)
1/3 cup macadamia nuts
1 1/2 tablespoons butter or margarine
2 tablespoons packed brown sugar
2 tablespoons frozen (thawed) pineapple or orange juice concentrate

Steps:

  • In large microwavable bowl, mix cereal, coconut, banana chips, tropical fruit mix and nuts.
  • In microwavable measuring cup, microwave butter uncovered on High about 30 seconds or until melted. Stir in brown sugar and pineapple juice concentrate. Microwave uncovered on High about 30 seconds or until hot; stir. Pour over cereal mixture, stirring until evenly coated.
  • Microwave uncovered on High 3 to 5 minutes, stirring every minute, until mixture begins to brown. Spread on waxed paper or foil to cool, about 15 minutes. Store in airtight container.
