Tropical Ensure Smoothie image

I was in the mood for something tropical but nutritious one day and had one can of Ensure on hand. Having tried ice cream shakes made with chocolate Ensure, I gave it a try. It's yummy and easily modified!

Yield 2 6-8 oz glasses, 2 serving(s)

Number Of Ingredients 10

1 (8 ounce) can vanilla ensure (I use banana ensure)
1 cup ice
1 cup low-fat vanilla yogurt
1/2 cup strawberry (sliced)
1 banana (sliced)
1/2 cup coconut (finely shredded works best)
1/2 cup crushed pineapple
4 ounces whipped cream (optional)
2 -4 maraschino cherries (optional)
1/4 cup walnuts (optional)

Steps:

  • Put the ice in the blender.
  • Add fruit, yogurt, and Ensure.
  • Blend.
  • Top with Whipped Cream, cherries and nuts (optional).
  • Enjoy!
  • **Refreezing the blended mixture for 2-4 hours makes a nice "ice cream" as well. Top with chocolate syrup, whipped cream, cherries and nuts for a banana split sundae.
  • **Add a shot of espresso to the smoothie for a Starbuck's Vivanno-like treat.
