These triple layered pineapple-coconut bars with a sugar cookie crust are quick and so easy. My family loves these island bars and my son asks for them - my husband who doesn't even like pineapple loves these moist chewy bars.

The bars were a little bit too crumbly. I think I should have pressed the crust into the pan more firmly.

The bars were a little dry. I think I should have added more butter to the crust.

These bars are a little too sweet for my taste. I would reduce the amount of sugar in the recipe next time.

I'm not a big fan of coconut, but I loved these bars. The coconut flavor is very subtle and it complements the pineapple and macadamia nuts perfectly.
