TROPICAL CHICKEN PACKETS image

Number Of Ingredients 9

4 12" x 8" sheets of non-stick aluminum foil
4 boneless, skinless chicken breast halves (1 - 1 1/4 lb)
4 green onions, cut into 1" pieces
1 can (20 oz) pineapple chunks, drained
1 medium red bell pepper, cut in strips
1/2 cup Teriyaki sauce
2 Tbsp packed brown sugar
1 tsp grated fresh ginger
Hot cooked rice

Steps:

  • Place one chicken breast on the center of each piece of foil. Top with green onions, pineapple and green pepper. Combine Teriyaki sauce, brown sugar and ginger; spoon over chicken and vegetables. Fold foil to seal packets but leave room for heat inside to circulate. Bake in 450 degree oven on a cookie sheet for 18 to 22 minutes, or 14 to 16 in a medium-high covered grill. Serve over rice with additional teriyaki sauce, if desired.
