Triple Ginger Pound Cake image

My Mother in law shared this recipe with me,I have not made it personally but she makes it often to rave reviews.

Number Of Ingredients 15

2 3/4 c sugar
1 1/4 c butter or margarine,softened
1 t. grated fresh ginger root
1 t. vanilla
5 eggs
3 c all purpose flour
2 t. ground ginger
1 t. baking powder
1/4 t. salt
1 c milk
1/2 c finely chopped crystalized ginger
PINEAPPLE CREAM:
2 c heavy whipping cream
2 t. confectioner sugar
20 oz can crushed pineapple,well drained

Steps:

  • 1. Heat oven to 350. Grease and flour 12-cup tube pan or 2 9x5x3 inch loaf pans. Beat sugar,butter,ginger root,vanilla and eggs in a large bowl on low speed 30 seconds. Beat on high speed 5 minutes. Mix dry ingredients together. Beat into creamed mixture alternately with milk on low speed. Fold in crystallized ginger till evenly mixed. Spread in pan. Bake 1 hour 10 minutes. Cool 20 minutes. Remove from pan. Cool completely on wire rack. Serve with Pineapple Cream. Beat whipping cream and sugar on high speed in a chilled bowl till stiff. Fold in pineapple.
