I love tortilla rollups and have eaten many different varieties. When coming up with recipes for my daughter's bridal shower, I wanted to be sure to have some meatless options for any guests who don't eat meat, so this is how I made the tortilla rollups for her shower - they were a big hit ith everyone!

Steps:
- 1. Mix all ingredients together except the tortillas. Divide evenly among the tortillas and spread mixture over each tortilla. Roll the tortillas up and cut into one inch slices. Refrigerate for a couple of hours and serve! You can serve these alone or with some salsa for dipping.
