Tortellini & Spinach Soup image

Great easy, quick recipe that tastes gourmet! People are so surprised to find out how easy it is to make. Great for a quick lunch. Use Vegetable Broth instead of Chicken Broth to make it vegetarian!

Number Of Ingredients 10

1 Tbsp butter or margarine
1 large onion, diced
2 clove garlic, minced
1 qt chicken broth
9 oz cheese tortellini
salt and pepper, to taste
1 can(s) stewed tomatoes ( 14 1/2 ounce can), chopped
1/2 box frozen, chopped spinach
1 tsp dried basil
1/4 c grated parmesan cheese

Steps:

  • 1. Melt butter and saute onions and garlic until soft. Stir in broth.
  • 2. Add tortellini, salt, pepper, stewed tomatoes, spinach and basil. Bring to a boil.
  • 3. Lower heat and simmer for approximately 5 minutes.
  • 4. Serve and pass parmesean cheese to sprinkle on top.
