Tomatoe and Sumac Salad image

This lovely Turkish salad is wonderful served with olives, hummus, bread and feta cheese. It is a great accompaniment to most dishes, the red onions and tomatoes work well with the tangy sumac.

Number Of Ingredients 10

3 medium tomatoes, quartered and roughly chopped
1 red onion, halved and thinly sliced
1 bunch of flat leaf parsley, roughly chopped
juice of 1 lemon
½ teaspoon sea salt
½ tsp white sugar (optional)
10 ml/2 teaspoon ground sumac
15ml/1 tablespoon extra virgin olive oil
½ teaspoon paprika flakes
freshly ground black pepper to taste

Steps:

  • 1. Mix the sumac, salt and (sugar - if using together)
  • 2. Use your hands to rub and work the sumac mixture into the onion slices. (this infuses flavor and softens the onions)
  • 3. Stir in the chopped tomatoes, parsley and paprika flakes and mix well.
  • 4. Whisk the oil and lemon juice well and then pour over the salad.
  • 5. Season with salt and freshly ground black pepper.
