TOMATO, RICE, AND SAUSAGE SOUP image

Yield 6-8 servings

Number Of Ingredients 10

6 ripe tomatoes
pinch of sugar
a little diced garlic
1 1/2 lbs sausage
8 cups stock or broth to match sausage (usually beef)
1/2 teaspoon oregano
1 cup uncooked long-grain rice
1/2 cup parmesan cheese
mushrooms, as many as you find delicious
salt and pepper

Steps:

  • Saute mushrooms and put in soup pot with tomatoes, sugar, and garlic. Simmer for 10 minutes. At the same time, cook sausage covered in water for 15 minutes. Drain and slice. Add sausage to pot with stock and oregano. Bring to a rolling boil. Stir in rice. Cook over medium heat about 10 minutes or until rice is done. Remove from heat and add cheese, salt, and pepper.
