TOMATO FLORENTINE SOUP image

Number Of Ingredients 9

28 oz. can chopped tomatoes
14 oz. can chicken or veggie broth
2 cups water
1/2 onion, chopped
5-6 oz. of frozen spinach (about 1/2 of the package)
2 garlic cloves, minced
1-2 tablespoons sugar
salt & pepper to taste
olive oil

Steps:

  • Saute garlic and onion in few tablespoons of oil until translucent and tender. Add spinach and cook for a few minutes on medium heat. Pour in tomatoes, broth and water. Add sugar, salt and pepper to taste. Let simmer about 15-20 minutes and serve with crusty bread.
