Tomato Casserole image

My husband loves it. They are delicious and tasty.

Number Of Ingredients 9

1/2 c pepperidge farm cornbread stuffing
1 no. 1 can tomatoes
1 Tbsp butter, melted
1 Tbsp bacon drippings
1/4 tsp seasoned salt
2 tsp sugar
3/4 c grated sharp cheddar cheese
1 c sliced vidalia onions
1/4 tsp oregano, dried

Steps:

  • 1. Spread bottom of pie plate with stuffing.
  • 2. In a skillet, mix tomatoes, butter, bacon drippings, salt and sugar. Heat until well blended.
  • 3. Put 1/2 tomato mixture on top of stuffing.
  • 4. Put 1/2 cheese on top of tomato.
  • 5. Place all onions on top of cheese.
  • 6. Layer remaining tomatoes, then remaining cheese.
  • 7. Sprinkle with oregano. Bake at 350 F. for 30 minutes. This is an excellent Lenten main dish.
  • 8. Variation: Add one layer cooked ground beef.
