My family has always been big on seafood, and this pan-fried salmon went over really well! The fresh tomato and basil topping complement the fillets beautifully.

I'm not a big fan of basil, so I used oregano instead. It was still delicious!

This recipe is a great way to use up leftover salmon. I made it with some leftover grilled salmon and it was just as good as when it was fresh.

I made this recipe with tilapia instead of salmon and it turned out great. I'm sure it would be just as good with other types of fish.
