Tomato, Basil and Brie Linguine image

If I had to pick a recipe that was my favorite, it would have to be this one. Given me by a beloved friend, I have made it hundreds of times. Be sure to use the freshest basil and tomato you can find.

Number Of Ingredients 8

4 large ripe tomatos, diced
8 oz brie cheese, rind removed and diced
1/2 c chopped fresh basil
1/2 c olive oil
4-6 clove garlic...more if you like garlic
1 tsp salt
1 tsp coarse ground pepper
1 lb linguine pasta

Steps:

  • 1. Combine first seven ingredients. Stir lightly to combine.
  • 2. Let stand for 6 hours at room temperature
  • 3. 1/2 hour before dining, cook linguine al dente. Drain.
  • 4. Toss tomato mixture with the warm pasta. Let stand 15-20m min. before serving.
  • 5. Serve with grated Asiago cheese and warm bread. A meal for the gods.....
