Tollhouse Mini Cookie Pies image

got recipe from the magic of mini pies book.My nephew just loves these

Number Of Ingredients 8

pastry for 4 top and bottom crusts
2/3 c brown sugar
1/4 c all purpose flour
2 eggs lightly beaten
3 Tbsp butter, melted
1 tsp vanilla extract
1 c finely chopped nuts (optional)
3/4 c chocolate chips

Steps:

  • 1. Line mini pie maker or muffin tins with a bottom crust for 4 pies.(I posted recipes for mini pie crusts I recommend the chocolate pie crust for this recipe)Combine brown sugar,flour,eggs,butter,and vanilla.Add nuts and chocolate chips and mix well.
  • 2. Divide filling between crusts.Slice top crusts into strips and place lattice style on pies. Bake in a mini pie maker for 8-10 minutes or in a 350 degree oven for12-15 minutes or until crusts are golden and filling is set.
