Tofu Pastry image

This is a great recipe for a healthier pastry. Much lower in fat than conventional pastry. From Viki Leng's "A Vegetarian Feast".

Yield 1 pie crust

Number Of Ingredients 6

250 g wholemeal pastry flour
1 teaspoon baking powder
90 g firm tofu, cut into chunks
1 tablespoon cold pressed sunflower oil
125 ml filtered water
additional flour

Steps:

  • Sift flour and baking powder.
  • Make well in the centre.
  • Combine tofu and oil and add to the"well".
  • Add water.
  • Work the mixture until a soft dough forms.
  • Turn onto a lightly floured surface and knead 30 seconds only.
  • Use immediately.
