Toffee Almond Sandies image

If you like toffee and almonds this cookie is for you! They are fun to make and nobody can keep their hands off of them. They always go quickly. Note: This makes several dozen of cookies, so it's great for the Holidays or large parties, pot lucks, family reunions, etc.

1 c butter, softened
1 c sugar
1 c confectioners' sugar
1 c canola oil
2 eggs
1 tsp almond extract
3-1/2 c all purpose flour
1 c whole wheat flour
1 tsp baking soda
1 tsp cream of tarter
1 tsp salt
2 c almonds, chopped
1 pkg (8 ounces) milk chocolate english toffee bits
additional sugar

Steps:

  • 1. In a large bowl, cream butter and sugars until light and fluffy. Beat in the oil, eggs and extract. Combine the flours, baking soda, cream of tartar and salt; gradually add to creamed mixture and mix well. Stir in almonds and toffee bits.
  • 2. Shape into 1-in. balls; roll in sugar. Place on ungreased baking sheets and flatten with a fork. Bake at 350° for 12-14 minutes or until lightly browned.
