Toasted Apple-Pecan Brie Sandwiches image

I came up with this recipe one night for dinner and my husband and family loved it and it has become a regular for us. The combination of spiced apples and brie cheese is amazing. Great served with a spring lettuce salad. You can also make this as an appetizer by using a baguette loaf instead of sourdough slices.

Yield 4

Number Of Ingredients 9

3 tablespoons butter
4 Granny Smith apple - peeled, cored and sliced
½ cup packed brown sugar
1 teaspoon ground cinnamon
¼ cup chopped pecans
4 slices sourdough bread
2 tablespoons butter
6 ounces Brie cheese, cut into long, even slices
1 pinch ground cinnamon, for dusting

Steps:

  • Melt 3 tablespoons of butter in a large skillet over medium heat. Add the apples; cook and stir until tender, 7 to 8 minutes. Stir in the brown sugar, 1 teaspoon of cinnamon and pecans and continue to cook for 1 to 2 minutes longer. Remove from the heat and set aside.
  • Preheat the oven's broiler.
  • Cut the slices of bread in half if they are very large and toast lightly. Spread the remaining butter on to one side of each piece of bread. Place two slices of brie cheese onto the unbuttered side of each piece of bread. Top with a generous scoop of the apple mixture. Place the open face sandwiches onto a baking sheet.
  • Broil until the cheese has melted, about 1 minute. Sprinkle with additional cinnamon if desired.

I don't recommend this recipe. The sandwiches were bland and the bread was soggy.

These sandwiches are way too sweet for my taste. I think I'll try a different recipe next time.

I'm not sure what I did wrong, but my sandwiches didn't turn out as good as I hoped. The apples were too tart and the brie was too runny.

I love that these sandwiches can be made ahead of time. It's so convenient to be able to just grab a sandwich out of the fridge when I'm in a hurry.

These sandwiches are a great way to use up leftover apples. I always have a few apples on hand, so it's nice to have a recipe that I can use them in.

I'm not a big fan of apples, but these sandwiches were still delicious. The brie and pecans really balanced out the sweetness of the apples.

Overall, I thought these sandwiches were pretty good. They were easy to make and they tasted good. I would definitely make them again, but I might try a different type of cheese next time.

The sandwiches were good, but I think they could have used a little more seasoning. I added a bit of salt and pepper and they were much better.

These sandwiches were a bit too sweet for my taste. I think I would have liked them better with a different type of cheese, like cheddar or Swiss.

I made a few changes to the recipe, but the sandwiches were still delicious. I used cheddar cheese instead of brie and added a little bit of Dijon mustard. I also grilled the sandwiches instead of toasting them.

I'm not usually a fan of brie, but this sandwich changed my mind. The sweetness of the apples and the crunch of the pecans really balance out the flavor of the cheese.
