Yield 5 toasties

Number Of Ingredients 8

3/4 C corn flour (I used Bob's Red Mill found at Whole Foods)
1/4 C gluten free flour blend
1 t baking powder
1/4 t salt
1/4 C unsalted butter, softened
1/3 C sugar
1 egg
1/2 t coconut extract

Steps:

  • 1. Whisk together the corn flour, all-purpose flour, baking powder, and salt. 2. In a separate bowl, cream together the butter and sugar. 3. Add the egg and coconut extract and blend well. 4. Then combine the flour mixture slowly into the butter mixture. 5. Place scoopfuls (serving spoon size) of batter onto a parchment lined cookie sheet, about an inch apart. Flatten. 6. Put the cookie sheets in the fridge for at least 10 minutes You can pop them in while you are pre-heating the oven to 350 degrees. 7. Bake the cookies for about 12-14 minutes, until the edges start turning golden brown.

I love that these toast-r-cakes can be made in a blender. It makes them so easy to whip up in the morning.

These toast-r-cakes are a great way to use up leftover bread. I always have a loaf of bread in the freezer, so I can make these whenever I want.

These toast-r-cakes were a bit too dry for my taste. I think I'll add some milk or yogurt to the batter next time.

I'm not a big fan of sweet breakfasts, but these toast-r-cakes were surprisingly good. I especially liked them with butter and syrup.

These toast-r-cakes are a bit too dense for my taste. I prefer pancakes that are light and fluffy.

I'm not sure why these toast-r-cakes are called 'toast-r-cakes'. They're more like pancakes to me.

These toast-r-cakes are a great way to use up leftover bread. I usually make them with white bread, but I've also tried them with wheat bread and they were just as good.

I've made these toast-r-cakes several times now and they always turn out perfect. I love that they're so versatile - I can serve them with butter and syrup, or with fruit and whipped cream.

I followed the recipe exactly, but my toast-r-cakes didn't turn out as crispy as I would have liked. I'm not sure what I did wrong.

These toast-r-cakes were a bit too sweet for my taste, but they were still good. I think I'll try making them with less sugar next time.
