This cookie sets itself apart from the rest by its scrumptious look, aroma and the sweet taste each bite brings. The smell of buttery brown sugar will fill your home as these classic grandmother favorites bake to a rich caramel color in your oven. They are so versatile, you can enjoy them with raisins, or chocolate chips!

Number Of Ingredients 13

1 cup butter (I prefer butter) or 1 cup margarine (I prefer butter)
1 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons pure vanilla extract
2 cups white flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt
2 1/2 cups quick oats
1 1/2 cups shredded coconut
1 1/2 cups raisins (optional)
1 (12 ounce) package milk chocolate chips (optional)

Steps:

  • Melt butter on the stove, then mix in sugar and brown sugar. DO NOT BOIL. Remove from heat. Pour butter and sugar mixture into a large mixing bowl and add eggs and vanilla. Mix thoroughly. Add baking powder, soda, salt, and finally the flour. Mix ingredient for about three minutes on high speed. Add quick oats and coconut. Mix for two more minutes. Then decide if raisins OR chocolate chips are your desire, and add them. (This cookie can stand on its own too, if you choose!).
  • Bake: 350 Degrees Time: 10 Minutes.
  • **This cookie dough can be rolled into cookie balls and frozen until you need them. So make them all now or just a few and freeze what you want to make later.
