Thai Yellow Curry - Vegan image

As a student, I can't really afford to visit Thai restaurants daily...otherwise I would. Yellow curry is one of my favorite Thai dishes. This is a recipe I've modified to my own taste and diet. Hope you enjoy it as much as my friends and I have!

I'm not a fan of tofu, so I used chicken instead. It turned out great! The chicken was cooked perfectly, and the sauce was flavorful and delicious.

The curry was good, but I found it to be a bit too sweet. I think I'll reduce the amount of sugar next time.

This recipe is a bit spicy for my taste, but I still enjoyed it. I think next time I'll use less chili paste.

This dish is a great way to use up leftover tofu. I had some tofu that was about to go bad, so I decided to try this recipe. It turned out great! The tofu was crispy on the outside and tender on the inside, and the sauce was flavorful and delicious.
