Thai Vegetable Soup image

1 cup chicken broth
2 teaspoons lime juice
2 slices ginger, fresh & peeled
2 tablespoons chopped tomatoes
2 teaspoons soy sauce
1 small garlic clove, peeled
1 cup spinach leaves, coarsely chopped
1/4 cup finely shredded carrot
1 teaspoon chopped fresh cilantro

Steps:

  • Combine broth, lime juice, ginger, tomato, soy sauce and garlic in small saucepan. Cook over medium to low heat for 10 minutes.
  • Stir in spinach, carrot and cilantro and return to a simmer and cook just until spinach is wilted. Remove ginger and garlic. Serve immediately.
