Thai Inspired Sweet Potato Fries image

1 1/2 lbs sweet potatoes, peeled and cut fries about 1 inch
2 tablespoons olive oil
1 -2 garlic clove, minced
1/2-1 teaspoon sambal oelek chili paste
1 tablespoon reduced sodium soy sauce

Steps:

  • Preheat oven to 425°F.
  • Combine oil, garlic, chili paste and soy sauce in a bowl. Add sweet potatoes and toss to coat.
  • Spread single layer on baking sheet.
  • Bake for 20 to 30 minutes, string once or twice to prevent burning and allow even cooking.
