Steps:
- 1. Separate biscuits land cut in half horizontally, making 20 pieces of thin pastry. Spray ramekins with a little nonstick cooking spray. Put a piece of pastry into each ramekin, press down. Bake for 10 minutes sat 350 til just brown and slightly puffy. You can make the quiche without the pastry crust if you like.
- 2. In large bowl, mix beaten eggs and cottage cheese. Beat in flour, baking powder and melted butter. Stir in Monterey jack cheese, green onions red pepper and chiles. Mix well. Pour mixture equally into ramekins. Sprinkle a few pieces of cheddar cheese on top (optional). Bake in oven at 350 for 20 minutes or til done. Serve warm, plain or with salsa on top or in small side bowl. Enjoy.
