Tex-Mex Chicken and Waffles image

While visiting Texas I bought a small bottle of jalapeno pepper jelly, which inspired me to try this recipe. It's like a kicked up Southern classic, and the syrup can be used as a dipping sauce for the chicken. -Debra Goforth, Newport, Tennessee

I had some trouble getting the waffles to cook evenly, but the chicken turned out great. Overall, I liked the dish but I'll need to practice making waffles.

This recipe was a bit too spicy for my taste, but I still enjoyed it. I'll definitely try it again with less cayenne pepper.
