From Tastes & Tales From Texas... with love by Peg Hein, c. 1984. This dish of shredded pork wrapped in flour tortillas is a slightly different and delicious version of an enchilada.

I'm a vegetarian, so I made this recipe with tofu instead of pork. It was delicious!

I'm allergic to pork, so I made this recipe with chicken instead. It was still really good!

This recipe is way too complicated. I'm not a professional chef and I don't have time for this.

These carnitas were dry and overcooked. I followed the recipe exactly, so I'm not sure what went wrong.

I found this recipe to be a bit bland. I added some extra spices and it was much better.

These carnitas were a bit too spicy for my taste, but I still enjoyed them. I'll probably reduce the amount of chili powder next time.

I'm not a huge fan of Tex-Mex food, but these carnitas were surprisingly good. I'll definitely be making them again.

I love this recipe! The carnitas are always so flavorful and moist. I usually serve them with tacos, but they're also great on nachos or burritos.
