Steps:
- Couper grossiérement la viande (porc, veau et lard) en morceaux. Emincer les escalopes en lanières. Passer les morceaux de viande au hachoir avec l'oignon coupé et le pain.
- Dans un saladier mélanger la viande hachée, les oeufs entiers, un peu de Cognac, des épices selon votre goût, sel et poivre. Préchauffer le four (sur 7).
- Tapisser votre terrine avec quelques tranches de poitrine fumée. Ajouter la moité de la farce, les lanières de poulet, puis le reste de la farce. Recouvrir de quelques tranches de poitrine fumée.
- Verser doucement dans la terrine un peu de gelée liquide, la laisser pénétrer un peu la farce et recouvrir de gelée. Mettre au four, au bain-marie dans la lèche-frite et laisser cuire à peu prés 1h30.
- Pour une variante on peux aussi ajouter à la farce des foies de volailles ou des pruneaux.
- C'est meilleur si on laisse "rassir" un peu la terrine, il vaut donc mieux la préparer la veille.
