2 15-can black-eyed peas,drained, 1 large ripe tomato, 1 sweet onion, 1/4 cup minced garlic, juice of 1or 2 lime, 2-3 tbs virgin olive oil, salt and pepper to taste.

Steps:

  • Combine all ingredients and stir. Let marinate for 1 to 2 hours.
