2 can(s) (15oz ea) chef boyardee beefaroni pasta
1 can(s) (14.5 oz) diced tomatoes (drained)
1 can(s) (15oz) black beans (drained & rinsed)
1 c frozen (or in our case canned) corn
1 tsp ground cummin.
top with shredded cheese of your choice and broken tortilla chips

Steps:

  • 1. First I must say you can find the OG recipe on the Chef Boyardee site... Now, place beefaroni through cumin in a large saucepan and stir.
  • 2. Bring to a boil over medium-high heat. Reduce heat, cover, and simmer 15 minutes.
  • 3. Top with TONS of cheese and tortilla chips. Actually, that part is up to you. We were VERY HUNGRY campers:)
  • 4. This is a MUST on camping trips! It's so easy, and filling. Well, if you're sharing with 6 people you may need to add bread and a salad or something. But who takes salad camping?!
