From the book, Church Suppers. This batter makes a cornmeal pancake for any Mexican or Tex-Mex meat filling.

1/2 cup cornmeal
1 cup flour
1/4 teaspoon salt
1 1/2 cups water
1 egg

Steps:

  • Beat together.
  • Pour onto a hot griddle, and spread out with a fork, making each the size of a pancake.
  • Fry until golden brown.
  • Fill with your taco meat, etc.
