Sweet & Spicy Pork Skewers image

Number Of Ingredients 11

5 pounds pork roast
1/4 cup garlic, finely minced
1 cup brown sugar
2 cup Soy Sauce
1/2 cup Sriracha
1 teaspoon red chili flakes
1 cup Soy Sauce
1 cup brown sugar
1/2 cup sriracha
1 tablespoon garlic, finely minced
18 pieces Pineapple, chunks, 1.5"

Steps:

  • Slice pork roast into 1/4" slices.
  • Weave onto skewers. Alternate pork with pineapple and set aside.
  • Mix next 5 ingredients and pour over meat. Allow to marinate up to 24 hours but at least 1 hour.
  • Grill at high heat to sear all sides of the skewer and place in a (grill safe) dish.
  • Mix remaining ingredients (and any remaining pineapple). Pour over grilled meat.
  • Cover with foil and allow to cook and sauce to thicken (about 10 minutes)
